IMO, it's cooler that the film builds up to M/L getting their costumes. It's an origin story. For example--in Batman Begins, he doesn't get into his costume until about an hour into the film.
About the uniforms--the colors match the original color scheme of the time.
There was no "Peach" when the film was written. Only Daisy.
Next time, try watching the movie while keeping in mind that the filmmakers only had access to the Mario games from 1985 to 1992. That might change your opinion a tad.
